Several weeks ago I attended a performance for Broadway Under the Stars from the Transcendence Theatre Company in Sonoma . My company sponsored half of the performance
while Moss Adams took care of the other half.
It was a great way to end an all day meeting in Sonoma . The weather was simply perfect for an evening
of great wine, food and entertainment. What a great way to spend a Thursday
evening.
There were passed appetizers and free flowing wine. I was particularly drawn to one of the passed
appetizers and thought I would recreate it for my Friday Night Bites
series. It was such a simple combination
of flavors but just shouted summer.
Since apricots are in their prime now, just a drizzle of honey, stilton
blue cheese, fresh thyme and a sprinkle of Maldon salt capped off this one bite
wonder.
I used a Turkish honey that I found at Trader Joes and it
has some wonderful undertones of floral notes and set off the ripe apricot
perfectly. You could also sprinkle with
some chopped toasted pecans for a bit of crunch as an additional element to
this appetizer.
Personally I would suggest pairing this appetizer with
either a sparkling wine or a light white wine or your favorite French Rose.
Apricots and Stilton Bites
Makes 16
4 Ripe Apricots
Honey
Stilton Cheese
Fresh Thyme Leaves
Maldon Salt
Cut the apricots into quarters and discard the seeds. Place
onto your favorite platter. Place a
small piece of stilton on top of each apricot and drizzle with honey. Place a small sprig of thyme leaf on each
apricot and a light dusting of Maldon salt. Serve immediately.
Those apricots are gorgeous, what a pretty summer appetizer!
