I love how toast is trendy now. You can top is with just about anything and
it becomes a hip appetizer. It has to be
one of the easiest appetizers to make and it will certainly WOW your friends
and family. The combinations are
endless.
Hubby and I walked to the farmers market last Saturday, like
we do often on a Saturday morning. We
pick up great treats and get our exercise in all one shot - about a 3 mile
round trip. This last week, they had the
most amazing scallions and I just had to get a couple bunches. After contemplating what to do with these
except the everyday uses for them, I thought let’s grill them to bring out the
flavor and make an appetizer with them.
It was such a simple concept – a bit of sour cream, sautéed garlic,
grilled onions and grilled bread. By the way, I procured the bread from the
farmers market as well.
It can be served with your favorite chilled brew or a glass
of chardonnay and the smoky flavor from grilling the bread just rounds out the
flavor palate. We completely look
forward to our Friday Night Bites evening at home after a long work week. There is nothing better than spending time
with my wonderful hubby, a glass or two of wine and some tasty treats. It just catapults the weekend into gear and
believe me, we enjoy every minute until the clock resets the workweek and we
count down again for the next weekend.
Grilled Scallion and Sour Cream Toasts
Makes 8
2 bunches of scallions
Olive oil
3 Tablespoons Sour Cream
2 cloves garlic
Salt and Pepper
Baguette
Brush the scallions with olive oil and grill over a BBQ or grill pan until grill marks are present. Remove and let cool.
Slice large baguette or Sour Dough loaf into half inch slices. Brush lightly with olive oil and place on BBQ or grill pan and toast until golden brown. Turn frequently to prevent burning.
Peel and mince the two cloves of garlic. Add a touch of olive oil and sauté in a pan until translucent. Let cool.
Chop the cooled grilled onions and place into a bowl. Add the sautéed garlic and sour cream and stir until combined. Add salt and pepper to taste. Spread onto the slices of grilled bread and serve and enjoy.
