Roasted Golden Beet Salad with Grilled Lemons


An inspirational trip to the farmers market resulted in this sublime roasted golden beet salad.  Do you all get inspired when browsing through the market?  Depending on the time of the year, different yields of types of vegetables and fruits.  The winter has more rustic hearty vegetables that simply warm your heart and belly.  I have always loved beets where I know others that simply can't stomach them.  I believe it is how you prepare them and the recipe you use that creates a tasty dish.

Charred Za'atar Cauliflower & Romanesco Salad


Happy 2019!  I know it has been a while since I have posted.  Been a bit more active on Instagram and plan to make an authentic effort to blog more in 2019.  Blogging still brings me joy and that is what it is all about.  Speaking of joy - this salad brings me tremendous happiness.  The combination of earthy, smoky, sweet and crunch is a perfect bite of joy.

Warm Brussels Sprouts Salad


At the beginning of December, we had our 4th annual Food Blogger Cookie Exchange and Gourmet Pot Luck.  How lucky am I to have met such wonderful ladies from all over the Bay Area.  I love that we met from a non-traditional method and all from writing food blogs. Everyone was able to join the festivities and Jean held the event at her warm and inviting house.

I am enjoying the distinct honor of being chosen as one of eleven DOLE Brand Ambassadors for 2015 and being part of their campaign – Get Up and Grow.  DOLE is one of those iconic brands that I am proud to represent amd believe in their products and company mission and values.  One of the many perks to being an Ambassador was being invited to the “Dole Fresh Fest” which was held in North Carolina.

Spinach, Cherries and Smoked Almond Salad with Honey Lime Vinaigrette + Dole Get Up and Grow Tour


There is nothing better than a fresh, flavorful and nutrition packed salad on a warm almost summer day.  I take that back, this fresh and flavorful salad can actually be enjoyed year round. Just use dried cherries instead of fresh if out of season. Oh and add a bit of crunch on top of the salad, now you have hit salad nirvana.  This nirvana is achieved when you have the freshest of ingredients on hand in your kitchen.

Did you know that May is National Salad Month?  If you are like me, then you are simply elated.  I probably eat salad 5 times per week and sometime twice a day – for lunch and dinner.  I love a salad with the freshest vegetables, a bit of crunch, grilled chicken and packed with flavor.  It is like love in a bowl – you get all of the right nutrition all in one convenient handy vessel.

Time whirls by.  It seems as though we were just putting away our Christmas decorations and yet in just a few days, we will be putting them back up again.  Hubby and I absolutely love this time of year and do our best to make the most of it.  As my hubby always says, the official start to the holiday season is his birthday which is October 9th.  Although it seems a bit early for the official holiday season, it makes him smile from ear to ear, so in our house that is the “official” start to the holiday season.

Baby Heirloom Tomato and Bread Salad


Last weekend at the farmer’s market I found indigo rose tomatoes.  I was instantly taken by the brilliance of the red with a dark purple hue that was magical to view.  I went to my monthly Restaurant Club lunch with my friends and enjoyed Haven.  Their biscuits with honey butter were to die for.  After our delicious lunch we gravitated to the farmer’s market that happens each Sunday at Jack London Square.  One of the farmers I visited has a vast array of baby tomatoes from yellow to green to the traditional heirloom baby tomatoes but the indigo rose really caught my eye.

Kale Avocado Salad with Smoked Paprika Vinaigrette | Secret Recipe Club



Lately it is feeling a lot like summer in the Bay Area.  Quite frankly it suits me just fine.  Last weekend hubby and I dusted off the patio cushions and set the backyard in motion for the season.  This meant the furniture was hosed off, the patio was wiped clean of leaves and other debris along with making sure the outdoor BBQ was ready to get a workout all summer long.  One of the most relaxing activities I enjoy is coming home from a long day at work and enjoying a glass of wine outside with my hubby.  The sound of the water dropping into the fountain and the warm summer air just sets the scene for perfection.

Asian Chicken Salad with Spicy Peanut Dressing



Let me just exclaim to the world – I love a great salad.  Boy that felt good.  With so many choices and variations of salad, it is sometimes a bit overwhelming to choose. Today is your lucky day.  The amazing folks at Dole Salads have now made our busy lives just a touch easier with the introduction of their Chopped Salad Kits and Salad Blends. These salad kits come with a theme and you simply add your favorite ingredients to make your own unique customized salad. The possibilities are boundless and only limited by your imagination and creativity.  I can only imagine the amount of creativity out there. Smile.

Back in May I was honored with an invitation to attend Dole’sSalad Summit and quickly learned how Dole differentiates itself from other brands in the market place.  After reflecting on the summit, the way Dole distinguishes itself from their competitors was quite clear.  First, they partner with local farmers around the county to bring the freshest produce to their production facilities so you have the best of the best that the market can offer.  In fact, within fours hours of picking lettuce, it is in the sealed salad bag. Second, they have produced an innovative package and process that keeps the salad fresher longer without adding harmful preservatives.  Lastly, each employee of Dole has such a high regard for quality along with ensuring they are consistently exceeding their consumers expectations along with building brand loyalty.

Fig, Beet and Watermelon Salad with Caramelized Shallot Dressing


A trip this weekend to the farmers market proved to be fruitful once again.  If you remember, I made a Farmer’sMarket Salad with Honey Lime Dressing about a week ago.  It was simply divine and this week I have another delightful summer salad to share.  Okay, if you know me or have been follow Authentic Suburban Gourmet for sometime, you know I have a slight obsession with figs.  I never really had them as a kid, except for the good ole fig Newton.  My affinity with these perfect little gems spans from my making my Balsamic Fig Jam to strategically placing on a Proscuitto and Fig Pizza.  The vivid colors of this salad scream fresh and tasty. 

A great salad can be a masterpiece, perhaps even your own Mona Lisa of sorts.  The possibilities are endless.  Often when I head to the farmers market I will browse the vendors to observe the seasonal offerings.  The simple clue is when 2 or 3 vendors are carrying the same items, and then you wrap back around and choose the vendor with the freshest produce.  Summer time is particularly bountiful with heirloom tomatoes, berries of all sorts, stone fruit galore, colorful peppers and sweet corn.

Farmer’s Market Salad with Honey Lime Vinaigrette



Strolling through my local farmer’s market early on a Saturday morning is incredibly relaxing.  I try to enter without preconceived ideas of what to purchase or planned recipes.  I have every intention of letting my mind be open to what bounty is available while exploring each vendor’s booth.  I must admit, I have a few favorites.  With the seasons consistently changing, the selection is embryonic and thus my repertoire evolves.

With my global friendly bag in hand, my mission begins.  A few baskets of small orange sweet tomatoes and ripe red tomatoes make their way into my basket from one of my favorite vendors, which happen to have prime real estate at the entrance of the market.  I guess that could be looked at two ways – people pick up right away or choose to stroll the rest of the market and then have a full bag.  I am the first scenario.

We just spent a marvelous week in the windy city.  I believe I am now at 28 states with 22 more to go to complete my bucket list of visiting all 50.  Chicago is an amazing city filled with great restaurants, a drop dead gorgeous skyline, friendly people, history and culture.  It was an inspirational vacation on many levels and will share some of the highlights for my weekly inspirations.

The last few days have definitely had summer reveal itself here in the Bay Area.  Personally I love it!  Each day this weekend we enjoyed our backyard with wine, food and friends.  Summer means salads too.  Recently I made what I deem the “Perfect Summer Salad”.  It is a Grilled Romaine Salad with Smoky Barbecue Vinaigrette.  Found the dressing recipe in the June issue of Food and Wine Magazine and created the rest of this divine salad.

Farmer's Market Salad with Sweet Paprika Dressing + Weekly Inspirations



Last week was chalk full of inspiration.  I was invited as a VIP Food Blogger to the Dole “Taste of Spain Salad Summit” in beautiful Carmel.  It was three days of talking about food, blogging, salads and learning about how the lettuce makes it to your table.  I gained new knowledge, met great people and will share the entire experience in a few days.  In the meantime, I was inspired to make a Farmer’s Market Salad with Sweet Paprika Dressing that I will share with all of you.

Kale and Farro Salad


It’s a beautiful weekend in the Bay Area.  Temperatures are supposed to round the 85 degree mark today.  I absolutely love this time of year. Hubby and I awoke to the birds chirping and crows laughing.  I guess they aren’t really laughing per se, but if you listen closely, it sort of sounds like they are. Smile.

Sundays at our house typically begin with a freshly brewed cup of coffee and watching the weekend edition of Good Morning America.  Next is the treadmill for me and a long bike ride for hubby.  Then the day begins. We decided that today would be set aside for chores around the house that are bit overdue.  Hubby is tackling the garage while I am excited to clean off the backyard furniture and put the cushions on. I don’t anticipate additional rain, but you never know.  One or two rain showers won’t hurt a thing.

Shaved Brussels Sprout Salad with Honey Garlic Vinaigrette



I love dinner parties.  I love planning, preparing and throwing a great dinner party.  It brings me much joy.  Saturday night brought me joy.  Hubby and I had another couple over for dinner.  Originally I thought we would go formal and spend the evening in the dining room.  Plans changed and decided to have a cozy dinner in the kitchen at our new Pottery Barn kitchen dining set.  The fire place was burning in the adjacent family room with music piped in through the speakers – just perfect.  It was chilly outside, candle light glistening through the antique votives and a slight wind pounding against the two windows in the kitchen nook.

Smoky Arugula & Fig Salad with Creamy Balsamic Vinaigrette



I can sense that fig season is winding down. It makes me sad. I simply adore these purple orbs of joy. The bright, vivid garnet color and tiny seeds that glisten with the light hits them, have a regal appeal. From my infamous Balsamic Fig Jam to pizza adorned with figs, I am simply mad about figs.

I guess when the season is complete; I will always have the dried mission figs from Trader Joes along with my stash of jam I made. Speaking of Trader Joes, it just has to be one of the BEST places on earth. My love affair with this store is strong. Each visit seems to yield a new product that either I have overlooked or is simply just that – new!


Ever since visiting Oxbow Market in Napa several months ago, I am obsessed with anything smoky. We tasted smoked olive oil and different salts with smoky additions. I was strolling down the cheese section at Trader Joes and found Smoked Mozzarella. The hint of smoke is muddled throughout this creamy delight. I used it on lavash bread with an addition of cherry tomatoes to make a refreshing pizza. With this salad I thought it would be a wonderful accompaniment to the figs and the smoky almonds from Trader Joes.

I was craving a salad and after pursuing the refrigerator and pantry, these ingredients simply sang to me. The sweetness of the figs along with the smoky components and the creamy balsamic dressing were a marriage made in heaven.

Smoky Arugula & Fig Salad with Creamy Balsamic Vinaigrette

8 C. Arugula
½ Medium Red Onion, sliced thin
¾ C. Smoked Mozzarella Cheese, grated
½ C. Smoked Almonds, rough chop
8 to 10 Fresh Figs, quartered

Creamy Balsamic Dressing

1 Shallot, minced
2 T. Mayonnaise
1 T. Dijon mustard
2 t. Honey
½ t. Salt
8 Grinds of fresh ground pepper
½ C. Balsamic Vinegar
1 C. Olive Oil

Add all ingredients to a pint sized mason jar and place the lid on top. Shake well and let sit in refrigerator for at least one hour to develop flavors. Refrigerate after using. 

Toss with salad ingredients and enjoy!

Grilled Corn and Tomato Salad + Reflections



We are smack dab in the middle of summer in the Bay Area. The heat index has been relatively mild overall. This weekend’s heat directory is expected to rise, especially in particular parts of the Bay Area. In contrast to the majority of country, we are enjoying comfortable weather.



Speaking of other parts of the country, I wanted to pause to pay my respects to the victims and their family and friends who were affected by the Colorado Movie Theatre tragedy. I can’t come close to understanding what these folks are feeling at this moment. What I can do is send positive thoughts and prayers to all who were affected and wish for peace to be in their hearts during this extremely difficult time. Time will begin to heal the emotional and physical wounds; until then we simply send many prayers and positive thoughts.


Events like this, stir various emotions for all of us. It reminds me how fragile life really is along with how we need to value each minute, hour, day, week, month and year we have on this earth. You hear the phrase – “Don’t sweat the small stuff” - how true is this statement? Now is the time to reflect on all of the gifts we have been given. Whether it is your family, friends, career or health – they are gifts.

Appreciate each.
Cherish each one.
Relish each one everyday.


I appreciate the simple things in life. My work week is often filled with a variety of meetings, leading people, managing processes, handling stress, ensuring profitability, problem solving, conflict resolution, coaching, mentoring, laughing, having fun at work and planning. I appreciate my career. When the workday is complete, I am fulfilled. I subscribe to the philosophy of living a balanced life.


Balance for me comes in the form of spending time with my hubby, family and friends. Many other activities bring balance for me including: exercising, cooking, blogging, traveling, dining out, watching my favorite television shows, reading, napping, learning and so much more. Simply reading a magazine and taking a nap in between or creating a simple new dish that is packed full of flavor are on my list of the simple delights in life. My Grilled Corn and Tomato Salad is one of my simple pleasures. Enjoy!

What are the simple things in life that make you happy?


Grilled Corn and Tomato Salad

6 Ears White Corn
2 C. Small tomatoes
1 C. Green peppers, sliced
1 C. Basil leaves, slightly packed then chiffonade
¼ C. Olive oil
2 T. Sherry vinegar
Salt
Pepper

Remove the husks and silks from the corn. Wash gently and brush slightly with olive oil. Add the grill and cook until each side has distinct grill marks. About 4 to 5 minutes. Let cool and then using a sharp knife, remove the kernels and place into a large bowl.

Add the tomatoes. Take each green pepper and cut into quarters along with removing the seeds. Slice thin and add to the corn. Chiffonade the basil leaves and add to the salad. Toss gently. Add the olive oil and sherry vinegar. Season with salt and pepper, then toss and taste for seasoning. Adjust by adding more salt, pepper, olive oil or sherry vinegar to your taste levels.

Farro, Date and Asparagus Salad with Mint Vinaigrette



The days of the simple iceberg salad are gone. Don’t hear me wrong, I still love an iceberg salad with handmade blue cheese dressing, tomatoes and crumbled bacon. I should clarify by saying that the evolution of salads is far more creative. From the bright caprese salad to quinoa to shaved vegetable salads – the variations today are imaginative, inspiring and flavorful.


A couple weeks ago my friend Helen and I ventured to the San Francisco Ferry Building on a Saturday to reap the rewards of the farmers market and then headed back on the bay bridge towards home. A detour was in order to Berkeley’s fourth street shopping mecca. Along with shopping, several wonderful restaurants adorn the streets. We had often passed Zut and never ventured in. Our stop was quite fruitful. We enjoyed their Farro salad that was adorned with dates, golden raisins, asparagus and walnuts.


It was such a tasty delight that I knew I needed to replicate at home. Here is my version of this lovely salad from Zut!....... Enjoy!!


Farro, Date and Asparagus Salad with Mint Vinaigrette

Makes 4 servings

1 ½ C. Farro
10 Madjool Dates, pitted and chopped
2/3 C. Raisins
16 Asparagus stalks, trimmed, grilled and cut into one inch pieces
1 C. Italian flat leaf parsley, rough chop leaves only
1 C. Walnuts, rough chop
2 T. Mint leaves, minced
1 T. Lemon zest

Heat 4 cups of water in a medium pot and add the farro to the water when boiling. Add a couple teaspoons of salt. Cook on medium  to medium high heat for about 10 minutes with the lid off until farro is tender. Drain in a colander. Set aside to cool.

Take the asparagus stalks and trim the bottom about an inch. Brush with a bit of olive oil and grill for about 2 to 3 minutes and remove from the heat. Let cool and cut into one inch pieces.

In a large bowl, add all of the above ingredients and toss. Add the vinaigrette and toss together. Taste for the addition of salt and pepper. Garnish with additional mint and lemon zest if desired. Serve.

Mint Vinaigrette

¾ C. Olive oil
3 T. Mint leaves, minced
3 T. Lemon juice
½ t. Salt
1 t. Pepper

Add all of the above ingredients to a mason jar and shake well. Let stand for 30 minutes for the flavors to develop.
